Short Summary of Differences in Grind Level
Grind for Espresso (Extra fine)
Espresso requires a fine grind, because water needs to pass through the coffee quickly for full brew extraction. If the grind is too coarse, the coffee will be under extracted and have sour flavors, if it is too fine it can be over extracted resulting in bitter tasting coffee. Moreover, the machine used to brew espresso must use high pressure to push water through the ground coffee. A fine grind will clog excessive amounts of water at once and lead to over extraction. A proper espresso grind size should look like powder or sandGrind for Paper Filter (medium-fine)
As long as your coffee is ground fine enough to filter through a paper filter without clogging it, this grind level will work fine. The powder/sand consistency of an espresso grind is not necessary with a paper filter. Furthermore, some paper filter makers recommend a slightly coarser grind to achieve better saturation. The grind level should be similar to that of a paper filter, but it's okay if the coffee is ground slightly finer because nel drip brewers have a fine cloth filter. If your coffee grounds are too coarse, they will leak out of the brewer and you will get coffee grinds in your cup.Grind for Siphon (medium-coarse)
For this brew method, the coffee is brewed using two separate chambers that are then combined to form one beverage. The siphon requires a slightly finer grind size than most other methods because you can't control when the coffee completely dries out in the wells of the filter chamber. If the grind is too coarse it will clog up the filtration system and cause overflow or slow drainage through your grounds. What about the Expiration Date?
We ship all our freshly roasted coffee from Japan right after roast. Most of our products have an expiration date of 1 year from roasting, so you will have enough time to enjoy your coffee! The date of expiration is printed on each package.

How long is the coffee good once opened?
The coffee is good for one year from roasting even after you open the package. However, we strongly encourage you to seal the coffee in an air-tight container, such as multiple zip lock bags, and store it in a dark, cool place or refrigerator to retain good taste. What is the best way to store coffee?
We suggest coffee be refrigerated but not frozen. If you decide to refrigerate, please make sure that you isolate the coffee from other food by either putting it in an air-tight canister or using multiple layers of zip-lock bags. What is the best water to use for Coffee?
Coffee is best prepared with filtered water with a moderate amount of minerals. If you have a water filter system, it is the best. If you use bottled water, try avoiding ones with "Added Minerals" as they tend to break the coffee flavor, you do not want distilled water either since some minerals are suitable to bond with the coffee molecule.

Our coffee is 100% safe from radioactive materials. Coffee beans are imported responsibly from outside Japan, and we freshly roast each batch of coffee.

Charcoal roasting is a unique coffee roasting process that involves roasting coffee beans over charcoal, giving the coffee a smoky, complex flavor profile. Charcoal roasting is believed to preserve the bean’s natural oils and flavors, making it an excellent option for any coffee connoisseur looking for a unique and flavorful cup of joe. The process is said to bring out bean's sweetness while also adding a subtle smokiness that can really enhance the flavor.
The process of charcoal roasting eliminates excess water in the coffee beans which causes an acidic taste. Because of the chemical reaction taking place during the roasting, its heat can penetrate the core of the beans and get rid of the water. The coffee beans are baked evenly from the core to the outer layers.

Our aim in the making of this blend was to accentuate the best features of Blue Mountain coffee, which are the absence of any strange taste or flavor, the smooth texture, and the impeccable balance achieved by a complete harmony among sweet, sour, and bitter tastes.
To achieve this, we have blended four different finely selected mountain coffees using the Golden Ration of 3:3:2:2. Cupping and taste-tests were repeatedly performed until we have found the ultimate cup that had the perfect balance, rich flavors, a mellow taste, and a smooth consistency, and the Mountain Quattro blend was born!
